AJ and PJ were best buddies this weekend. They loaded up with their video games for the drive to the ballpark for a Lexington Legends baseball game with the Dad and Grandpa. They had time to play with toys and watch a little TV. After the rain stopped and the sun came out, they jumped into the pool for a swim! And, yes, the rain held off long enough for the fireworks Friday night.
We had a traditional hamburger and hotdog cookout, but I broke tradition this weekend and didn't make my usual flag cake using pound cake slices, whipped topping, strawberries and blueberries. Instead, I made a recipe I found in a local newspaper for -- Mountain Dew Cake. Directions follow: Cake: Pecans, chopped 1 box yellow cake mix with pudding 1/2 cup oil 1/2 cup water 1/2 cup Mountain Dew 4 eggs 1 package vanilla instant pudding Glaze: 1 stick butter 1/4 cup Mountain Dew 1 cup sugar Preheat oven to 325 degrees. Grease a bundt pan with solid shortening and dust with flour. Place pecans in the bottom of the pan. Combine cake mix, oil, water, Mountain Dew, eggs and pudding mix. Pour over pecans. Bake 50 to 60 minutes. To make glaze: Combine all ingredients in a saucepan Cook untio mixture coats a spoon. Pour over cake while it's in the pan. Let cool completely before removing from pan. By the way, (to turn this into a tea discussion) the only tea consumed at our Kentucky home during this hot and humid Fourth of July weekend was iced tea!

"Friendship Tea Recipe" ~~ 1/2 cup instant tea, 1 cup sweetened lemonade mix, 1 cup Tang, 1 tsp. ground cinnamon, 1/2 tsp. ground cloves, Combine all ingredients and mix well. Store in a an airtight container. To serve, put 2 to 3 tsp. mix in a mug and stir in 1 cup of boiling water. Adjust amount of mix to taste. Enjoy!
