Smoked Turkey and Cranberry-Orange Sandwiches

I will continue to post recipes from the Tea Time with Berea Health Ministry event.  I don't have individual photos of all the menu items, therefore, I will show the plate for the rest of the recipes.  On the upper right of this plate is a rectangular shaped sandwich.  The recipe follows:

Smoked Turkey and Cranberry-Orange Sandwiches

½ cup prepared whole cranberry sauce

½ cup mayonnaise

½ teaspoon freshly grated orange zest

½ pound thinly slices deli smoked turkey

20 slices good quality, dense bread

In a small bowl, combine whole cranberry sauce, mayonnaise and freshly grated orange zest. Cover and refrigerate mixture at least one hour for flavors to blend.

Spread mixture on bread slices. Top 10 slices of bread with sliced turkey and cover with remaining bread slices to assemble. Use a sharp serrated knife to remove the bread crusts and cut sandwich into desired shapes.

These sound delicious and will also be a great way for me to use up that last can of cranberry sauce I still have!

Yummm! These sound so good and the carrot sandwiches sounded good too. Both are so pretty. Even though I had tea on Wednesday, your sandwich make me hungry again for little tea sandwiches. I can skip the sweets, but love the sandwiches and savories.

That smoked turkey sandwich sounds delicious. Like Marilyn, I enjoy the tea sandwiches more than the sweets. Of course, I'm not including scones in the same catagory as sweets - I love scones.
