(Internet Photo)Did you read Thursday's Dear Abby column? It featured Abby's Famous Pecan Pie Recipe, one of the column's most requested recipes. The original Abby, Pauline Phillips "discovered" this pie years ago while she was a guest at the Phoenix Hotel in downtown Lexington, KY. The hotel was opened in the 1820's and was an elegant, grand hotel. The building was demolished in 1987. The location is now Phoenix Park on Main Street in Lexington.
Abby's Famous Pecan Pie Recipe
1 cup light corn syrup
1 cup firmly packed dark brown sugar
3 eggs, slightly beaten
1/3 cup butter, melted
1/2 teaspoon salt
1 teaspoon vanilla
9-inch unbaked pie crust
1 heaping cup pecan halves
Heat oven to 350 degrees. In a large bowl, combine corn syrup, brown sugar, eggs, butter, salt and vanilla; mix well. Pour into unbaked pie crust; sprinkle with pecan halves.
Bake at 350 degrees for 45 to 50 minutes or until center is set. A toothpick inserted in the center will come out clean when pie is done. Cool and serve. Enjoy!
