Olive Nut Cream Cheese Spread Recipe

Olive Nut Cream Cheese Spread on finger sandwiches is a favorite in our area. They are often served at ladies gatherings, bridge parties and of course, afternoon tea. 

I made them today on Oatnut bread, and served at our DAR chapter meeting. 

OK, my question is... do you cut the crusts off the bread before spreading with the filling as above
or...
Do you spread the filling on the sandwich, put the sandwich together then cut the crusts off?

AJ observed the process as I made them late this morning and suggested I cut these sandwiches into four squares
rather than three fingers as did for the recent baby shower I co-hosted.

As you can see, I cut the sandwiches into squares, put them into an air tight container between layers of wax paper.
The ladies enjoyed them this afternoon and asked for the recipe I used.  Here it is:

Olive Nut  Cream Cheese Tea Sandwiches
12 oz. whipped cream cheese
2 Tbsp. mayonnaise

1 cup chopped salad olives (the sliced green olives with pimientos)
1 cup chopped pecans
2 Tbsp. olive juice

Mix together all ingredients. Generously spread on bread slices with crust removed. Cut each sandwich into four squares or triangles.
