Adventures with Tea Friends - Boone Tavern Hotel

Phyllis of  The Relevant Tea Leaf blog and good friend Sandy
 who were fellow tea travelers on the Tea in London 2007 Tour,
arrived in Berea Monday, April 30. 
We enjoyed dinner at historic Boone Tavern Hotel with my family
 as a special beginning of a fun and tea-lightful week.

A perfect dessert for Derby week in Kentucky

Richard Hougen's Boone Tavern Race Day Pie

Ingredients:
1  10" unbaked pie shell
1/4 cup butter or margarine, melted
1 cup dark Karo syrup
1 cup sugar
4 whole eggs
1/2 cup chocolate chips
1/2 cup chopped pecans
1/2 teaspoon vanilla extract

Directions:
Mix all ingredients well and pour into prepared pie shell.  Bake for 40 to 50 minutes in a 350 degree oven until browned and firm.  Chill and serve with a dollop of whipped cream.

Oh wow -- that looks like a great place to dine, and that pie sounds divine! (Maybe I should have met you all in Kentucky instead of driving straight to Asheville, ha!)
