Comfort Food - Homemade Potato Soup

My mother's cure-all comfort food was her homemade potato soup.
As I recall, her "recipe" was just a simple concoction of chopped potatoes, butter,
milk, salt and pepper.
I have tried to duplicate her recipe over the years,
 but I tend to add a little of this or that,
including small amount of chopped carrots and chopped onions
cooked with my potatoes. 
No matter how good my potato soups tastes, it's just not my mothers. 
Barbara, a church friend, gave me the following recipe for Potato Soup.
I made it over the weekend when the family visited.
Potato Soup
10 cups of diced potatoes
1/2 cup minced onion
1/2 tsp. crushed red pepper (more or less to taste)
2 - 32 oz. chicken broth
2 - 8 oz. cream cheese
Combine broth, potatoes, onions and pepper and cook until potatoes are tender. 
Remove 2 cups of potatoes and mash (do not drain potatoes)
Return mashed potatoes to pot, add cubed cream cheese,
stirring frequently until cream cheese is melted. 
Serve with shredded cheddar cheese and bacon bits to garnish.
I added salt and fresh ground pepper to taste.

My Uncle Marvin's potato soup is a family favorite. It's close to your but doesn't call for cream cheese rather whole milk. It is time for me to get busy a make a batch. Thanks for the reminder. Karen

My mom made potato soup similar to your mothers. Did you like the new recipe, it does sound good with the cream cheese.

There is nothing better than Granny's potato soup - well next to her friend chicken, meatloaf and soup beans...miss her home cooking :-(
