St.Patrick's Day Tea Menu


These are photos from a St. Patrick's Day Tea I hosted a few years ago.
Menu
Bottom Tier  - Sandwiches and Savories:
Shamrock Chicken Salad Shell
Wearing-of-the-Green Savory (mini spinach quiche)
Emerald Isle Egg Salad Tea Sandwich
Leprechaun Pineapple Kiwi Tea Sandwich
Traditional Irish Cucumber Tea Sandwich


Middle Tier - Scones and Fruit Breads:
Blarney Scones
served with Clotted Cream and Lemon Curd
Queen's Fruit and Nut Cake


Top Tier - Sweets:
Pot o' Gold Pecan Tassie
End of the Rainbow White Chocolate Mousse Cup
Irish Clover Cookie
Luck of the Irish Tart


Each course was served with a different tea:
Assam (Irish Breakfast).  Darjeeling and White Teas were served
This was a fun afternoon tea to plan.
The theme, St.Patrick's Day, was "green" with several green food items.
Notice how I like to name the foods served for the occasion and tea party theme.

PINEAPPLE KIWI TEA SANDWICHES
1 8-ounce pkg. cream cheese, room temperature
1/4 cup pineapple preserves
1 Tbsp. mayonnaise
2 fresh kiwis, peeled and thinly sliced
16 slices whole wheat bread
Remove crusts from bread and cut into rounds.  In medium bowl,  mix together the cream cheese, preserves and mayonnaise.  Spread evenly on top of each slice of bread.  Top with a slice of kiwi.
Makes 32 open- faced sandwiches.
