arrived in Berea Monday, April 30.

A perfect dessert for Derby week in Kentucky
Richard Hougen's Boone Tavern Race Day Pie
1 10" unbaked pie shell
1/4 cup butter or margarine, melted
1 cup dark Karo syrup
1 cup sugar
4 whole eggs
1/2 cup chocolate chips
1/2 cup chopped pecans
1/2 teaspoon vanilla extract
Mix all ingredients well and pour into prepared pie shell. Bake for 40 to 50 minutes in a 350 degree oven until browned and firm. Chill and serve with a dollop of whipped cream.
