Jambalaya, Crawfish Pie, and File Gumbo

We  have traveled to New Orleans several times over the years.
And, I have listened to the words of the Hank Williams song "Jambalya"
 many times during my life.
But, the words of that song finally hit me while reading the menus at several Cajun
 restaurants in the French Quarter on this 2012 trip.

at Arnaud's Remoulade on Bourbon Street.

 described as "the trinity of New Orleans traditions, a sampling of jambalaya, creamy red beans and rice, and chicken and andouille sausage gumbo. 
 I added the 4th sample to the above.
It is Crawfish Etouffee.
Oh my!
Po-Boys were on all the menus.
