Mock Clotted Cream Recipe


Mock Clotted Cream is one of my most requested recipes.
I have made several different, but  
this is one for which I've received a lot of comments and compliments,
therefore, I thought I would share it here. 

Mock Clotted Cream
1 cup heavy whipping cream
1/2 cup Mascarpone cheese
1 to 2 tablespoons sugar
In a chilled bowl, combine the cream, Mascarpone, and sugar,
beating several minutes or until the mixture forms a thick smooth creamy texture. 
Refrigerate until ready to use.
(I use an electric hand mixer and chilled beaters)
Makes about 1 1/2 cups
