Chunky Chicken Salad, Pimiento Cheese and Benedictine Spread
on gluten free crackers and a cup of Elmwood Inn Fine Teas Kentucky Blend.
I picked-up the spreads from a favorite deli in Lexington on Friday.
Pimiento Cheese is a southern tradition.
It is sold in plastic containers in the refrigerated section at most southern grocery stores.
It is used as a sandwich filling, as a spread on crackers, as a dip,
to make cheese burgers, and much more!
There are as many recipes for Pimiento/Pimento Cheese in Kentucky as there are cooks.
Every cook makes her own version.
I wish I had my mom's recipe, but I doubt it was ever written on paper.
Some cooks use only cheddar cheese freshly grated using a box grater.
Other cooks use Velveta Cheese, while some might
combine their cheeses of choice with cream cheese or American cheese.
Some cooks only use Miracle Whip, but many will only use Hellman's Mayonnaise,
or only Dukes Mayonnaise. While some recipes say to drain the 4-oz. jar of Pimientos/Pimentos,
others will say not to drain it.
I know several cooks who add sugar to everything including this delicious spread.

Below is a recipe from Southern Living Magazine found online.

Basic Pimiento Cheese
1 1/2 cups mayonnaise (seems like a lot to me, I would start with less and add as needed)
1 (4-oz.) jar diced pimiento, drained
1 tsp. Worcestershire sauce
1 tsp. finely grated onion
1/4 tsp. ground red pepper
1 (8-oz.) block extra-sharp Cheddar cheese, finely shredded
1 (8-oz.) block sharp Cheddar cheese, shredded
Stir the first 5 ingredients together and combine with the shredded cheeses.
Refrigerate in an air tight container.

Linda's Breakfast Casserole Recipe
6 cups cubed bread, crusts removed (I used gluten free Trader Joe Bread)
1 pound sausage, cooked, crumbled and drained of fat (or 2 cups cubed ham)
1 1/2 cups Colby-jack cheese, shredded
8 eggs, lightly beaten
2 cups milk
1 tsp. dry mustard
The night before: Layer bread cubes sausage, and grated cheese in a 9 x 13 baking dish.
Combine eggs, milk, salt and dry mustard and pout over the ingredients in the baking dish.
In the morning, remove from refrigerator and let sit 30 minutes.
Bake for 45 minutes at 350 degrees.
Lets sit for 5 minutes, then serve.
I also made a casserole using frozen hash browns (thawed) as the base instead of bread.

"Friendship Tea Recipe" ~~ 1/2 cup instant tea, 1 cup sweetened lemonade mix, 1 cup Tang, 1 tsp. ground cinnamon, 1/2 tsp. ground cloves, Combine all ingredients and mix well. Store in a an airtight container. To serve, put 2 to 3 tsp. mix in a mug and stir in 1 cup of boiling water. Adjust amount of mix to taste. Enjoy!
