Austin celebrates his 17th birthday today (Tuesday),
with a new camera and flying lessons. 
There he goes
 And he's off the ground.

Memorial Day Weekend

Memorial Day is a day honoring American soldiers
who died serving the country in wars.  

However, in the south, this holiday has long been known as
"Decoration Day,"
a time to decorate the graves of all family members. 
I can recall many years of going with my parents to 
decorate graves in the country cemetery. 

Glenn and I decorated many of our family graves earlier this week, 
both in town and in the country.  
On Sunday, as I write this, the graves of all servicemen in 
our local cemetery will have a small American Flag
on them, placed there by the American Legion Post, and many more will 
have been "decorated" with flower arrangements. 
Memorial Day weekend is a time for families from afar to come
back to their Old Kentucky Home. 

I have to wonder if this long-standing tradition will continue
after my generation is gone.

Vintage Crown Dorset Teapot

 The 2nd teapot I purchased to ease my pain from breaking
the James Kent teapot last week is this pretty Crown Dorset. 
I originally thought I could "replace" the broken teapot with another,
when I finally realized it can't be "replaced." 
 Therefore, to ease my pain from the loss, I purchased four
new-to-me teapots. 
Buying an English teapot always makes me happy!

Japanese Sister Region Visitors

We hosted the Japanese Sister City Delegation on Tuesday evening
for the opening dinner and casual welcome reception
at the Berea office of Delta Natural Gas Company. 
Years ago, we began hosting the event at our home and then Boone Tavern Hotel.
Everyone seems to enjoy this informal location.  

Kentuckians are scattered among the delegation  members for
casual conversation and gift-giving. 
Several of the delegation members brought photos and maps from home

Catering By Ann has prepared the food for years.
As long as she brings her famous Sweet Potato biscuits with Kentucky Country Ham,
Glenn and Austin are happy.
It is always a fun event! The sister city/region exchange began in 1988.
The Japanese travel to Kentucky in the Spring and the
Madison County folks travel to Japan in the fall.

A Vintage Sadler Teapot

 So, this is the story: 
I stood at the kitchen sink hand washing four
teacup trios (teacups, saucers and dessert plates) and
my beautiful English James Kent teapot as I prepared for guests.
The phone rang and it was my good friend Mary calling.
We chatted, I washed.
When suddenly, whack! I accidently hit the stone counter top
with the end of the spout and broke a good half inch off! 
No tears on my part, but it sent me directly to eBay to see if it could be replaced,
knowing it would take a miracle to find the exact replica. 
To make a long story short and four teapots later,
I didn't find another James Kent.
These are photos of my non-Kent "replacement teapot #1."
I purchased this English Sadler in a pretty pansy pattern.
 I am very pleased with this reasonably-priced find. 
Sadler teapots are among my favorite English-made vintage collectibles.
Yes, I said this is #1 of four non-James Kent replacement teapots,
along with several more items purchased. 
I'll be staying off eBay for a while.
In the meantime, I'll share photos of my other "pretties" soon.

Busy Week with DAR

 I have been busy with DAR this week, but it had nothing to do with tea. 
It is the time of the year our chapter presents awards to students in three high schools.

Derby Day At Our Old Kentucky Home

 Austin and Kaitlyn made their own version of a Derby Day drink
with Sweet Tea and Lemonade and a sprig of fresh Kentucky Colonel mint.
No mint juleps served here - just Arnold Palmer's with mint.

Chunky Chicken Salad, Pimiento Cheese and Benedictine Spread
on gluten free crackers and a cup of Elmwood Inn Fine Teas Kentucky Blend.

I picked-up the spreads from a favorite deli in Lexington on Friday.
Pimiento Cheese is a southern tradition.
It is sold in plastic containers in the refrigerated section at most southern grocery stores.
It is used as a sandwich filling, as a spread on crackers, as a dip,
to make cheese burgers, and much more!  
 There are as many recipes for Pimiento/Pimento Cheese in Kentucky as there are cooks.
Every cook makes her own version.
I wish I had my mom's recipe, but I doubt it was ever written on paper.

Some cooks use only cheddar cheese freshly grated using a box grater.
Other cooks use Velveta Cheese, while some might
combine their cheeses of choice  with cream cheese or American cheese.
Some cooks only use Miracle Whip, but  many will only use Hellman's Mayonnaise,
or only Dukes Mayonnaise. While some recipes say to drain the 4-oz. jar of Pimientos/Pimentos,
others will say not to drain it.
I know several cooks who add sugar to everything including this delicious spread.
I have shared several different recipes on the blog.

Below is a recipe from Southern Living Magazine found online. 
Disclaimer: I haven't made this recipe.

Basic Pimiento Cheese 
1 1/2 cups mayonnaise (seems like a lot to me, I would start with less and add as needed)
1 (4-oz.) jar diced pimiento, drained
1 tsp. Worcestershire sauce
1 tsp. finely grated onion
1/4 tsp. ground red pepper
1 (8-oz.) block extra-sharp Cheddar cheese, finely shredded
1 (8-oz.) block sharp Cheddar cheese, shredded
Stir the first 5 ingredients together and combine with the shredded cheeses.
Refrigerate in an air tight container.

This is the Derby section from the Lexington newspaper this morning. 
The entire state celebrates including our county located 2 hours from 
Churchill Downs in Lousiville (Loo a vull)

Lexington and Louisville TV coverage began early this morning
and will cover the entire day of races.  
I heard the facinators would be larger this year.

Prom Weekend

 Alexa and Austin ready for BCHS Prom 
It's a masquerade ball. 

After-Prom Breakfast provided by junior class parents: 

Linda's Breakfast Casserole Recipe
6 cups cubed bread, crusts removed (I used gluten free Trader Joe Bread)
1 pound sausage, cooked, crumbled and drained of fat (or 2 cups cubed ham)
1 1/2 cups Colby-jack cheese, shredded
8 eggs, lightly beaten
2 cups milk
1 tsp.salt
1 tsp. dry mustard

The night before: Layer bread cubes sausage, and grated cheese in a 9 x 13 baking dish.
Combine eggs, milk, salt and dry mustard and pout over the ingredients in the baking dish.
Refrigerate overnight.
In the morning, remove from refrigerator and let sit 30 minutes.
Bake for 45 minutes at 350 degrees.
Lets sit for 5 minutes, then serve.

I also made a casserole using frozen hash browns (thawed)  as the base instead of bread.
